Here are some preferred almond pancake toppings of mine:

Butter

Simple Paleo Ice Cream Recipe

It's the festive season and watching relatives and friends gorge themselves on ice cream and tasty sweets can be painful when you're trying to stay healthy and stick to a rigid nutrition plan. I know as a follower of the paleo diet the hardest thing for me to adjust to was the lack of desserts and sweets for the paleo follower. However there is hope, by replacing regular milk with coconut milk and swapping the ultra heavy chocolate and sugar filling for natural fruits and nuts we can create gorgeous and equally delicious recipes for the paleo diet follower.

Simple Paleo Ice Cream Recipe

I got creative earlier and here's a simple tried and tested ice cream recipe to sate the sweet tooth of the Paleolithic patron. The trick with this is preparation and smoothness, as it's tricky at first to stop the eggs from scrambling, which completely ruins the dish. Make sure the temperature is warm enough to melt the ingredients but not too hot to make them curdle and boil, once you've got this right though you will never look back.

Ingredients:
* 400ml coconut milk
* 2 large eggs
* 3 tbsp honey
* 1/4 cup blueberries
* 1/2 cup processed strawberries
* 2 tsp cinnamon

How to make:
1. Place a heat proof bowl over a simmering pot of water. Make sure the bowl is wider than the pot so it sits on top comfortably and there is enough space under the bowl to ensure no part of it comes in direct contact with the water.

2. Place the strawberry, blueberry and honey into the bowl and heat until it's warmed through but ensure heat is low enough to prevent boiling.

3. Separately whisk the eggs. When they are thoroughly whisked slowly mix in a quarter of the wet mixture with a mixing spoon, slowly and delicately. Ensure the eggs don't scramble by maintaining a warm but not boiling temperature and constantly stirring with your spoon. Continue until all of the wet mix is mixed in and a thick creamy sauce is created.

4. Let the mixture cool off before placing into the fridge.

5. Place the mixture in a container and place in the freezer. Remove every 25 minutes for 2 and a half hours until you have a creamy ice cream.

This is a recipe that I love but it is easily customisable. Try varying the fruits in the mix and garnishing with nuts, cinnamon or any other flavours you fancy. Even sweeteners to help bring out the sharpness and taste.

The Gluten Free Diet

Gluten-Free Diet: GF Recipes: Southwestern Chicken Lasagna

Ingredients:
Serves 4

8-10 uncooked DeBoles Rice Lasagna
1 pound coarsely ground chicken
1 egg or egg substitute
2 cups low fat ricotta or cottage cheese
1 cup reduced fat cheddar or Monterey Jack cheese
2 cups cooked beans (kidney or pinto), mashed
1/2 cup water
1 teaspoon cumin
1/2 teaspoon garlic powder
1 cup prepared picante sauce, divided in half
1 small can chopped green chilis
2 cups crushed stewed tomatoes

Directions:
Mix egg and both cheeses in a bowl. Saute chicken in skillet until cooked. Add coarsely mashed beans, water, cumin, garlic powder, 1/2 cup picante sauce and the chilis. In separate bowl, mix tomatoes and remaining 1/2 cup picante sauce. In 9x13 inch pan, layer as follows: tomato sauce, noodles, chicken/bean mixture, cheese mixture. Then repeat. COVER and bake at 350 degrees for 1 hour or until done.

Ingredients:

1 cup cooked brown rice
1 Tablespoon margarine or butter
1 cup cooked white rice
2 eggs, well beaten
2 cups milk
1/4 teaspoon salt
1/2 teaspoon GF vanilla
1/3 cup sugar
1/4 cup raisins (optional)
nutmeg

Directions:
Mix ingredients together. Put in buttered 1 1/2 quart baking dish. Bake at 350 degrees for a total of 60 minutes. Stir every 20 minutes and sprinkle lightly with nutmeg after the 2nd stirring. Serves 5.

Serving up the perfect steak can be intimidating for many people, but it doesn't have to be. You can prepare the most delicious and healthy steak you have ever had by following a couple basic tips.

1st Tip:
Make sure that your beef is grass fed. Grass fed beef is better for your overall health and well-being than grain fed beef.

2nd Tip:

After you flip it let it cook until it's at the desired done-ness. Also when you flip your steak, use tongs, instead of a fork. When you use a fork you prick the steak, causing the flavorful juices to seep out.

6th Tip:
Even though your steak is cooked. There is still one last, important tip to remember. Let it sit for 5-10 minutes before serving; this allows the juices to set in.

The Dangers of Soy and Some Great Soy Alternatives

Soy has been around for centuries and centuries. It is known as shoyu in Japan, and later adapted to the word "soy" that we currently use.

Before it was a source of food, the soy crop was revered in Asia and used to fix nitrogen in the soil when rotating crops.

Soy was not eaten until the Chou Dynasty, when fermenting techniques were discovered. It was made into foods like miso, natto, and soy sauce. Historically, the Chinese did not eat a lot of soy that was unfermented. Even today, unfermented soy is not a large mainstay of the Asian diet, and is often eaten with meat and fish broths, which helps to counteract the harmful effects of soy on the body.

After the early 1900s, soy became a major crop in the United States. However, it did not become a source of food until the 1920s. Growing soy was especially important after World War I and during the Great Dustbowl. It was used to help fix the soil in order to reestablish huge crops in the Mid-East areas of the United States (remember... it has awesome nitrogen-fixing properties). From 1932-1933 Henry Ford spent about ,250,000.00 on soybean research. It was used to make paint and oil with for his car company, Ford Motor Company. Ford even hired chemists to make silk out of soy, called Azlon (although Dupont came along and took over the market with their version of "faux-silk," called polyester).

From there, soy took off as a food ingredient, first being used to make ice cream and non-dairy whipped cream. Now, it is prevalent in everything from chocolate to processed grain-cereals. In fact, soy is found in many processed foods, both Organic and Conventional. It is well-known as the main ingredient in infant formulas and protein drinks.

But Hey, What's the Problem With Soy?

A lot is wrong with soy. Although this "miracle-bean" is touted as a factor in longevity and heart-disease prevention, it comes with many more risks than so-called benefits. The dangers of soy are many:

Phytic Acid in Soy

Soy contains Phytic Acid. Phytic Acid in soy cannot be neutralized (like it can in some grains, seeds and nuts) by being soaked in an acidic medium. Phytic acid is also not neutralized when soy is cooked or during its processing. Phytic Acid is an enzyme-inhibitor. And what it does is block mineral absorption in the digestive tract. That means when eating soy, you block your body's ability to absorb calcium, magnesium, zinc, iron and copper. A mineral deficiency contributes to a variety of health problems, not limited to growth problems in children, immune development and thyroid disease. Only fermentation will neutralize Phytic Acid in soy.

Goitrogens

Okay, I bet you may not have heard of this one. And the risk with ingesting too many goitrogens (which are plentiful in soy), is it suppresses the thyroid. This can lead to weight gain, fatigue, inability to concentrate, decreased focus, feeling cold all the time, and so much more. Don't take your thyroid gland for granted, because once you start to have problems here, the road to recovery can be long and agonizing (I know).

Phytoestrogens

Back in the olden days, phytoestrogens were believed to be a woman's BFF (Best Friend Forever). Soy was the super-duper magic elixir that could help a woman with her hormones. Phytoestrogens mimic estrogen. Independent research (NOT sponsored by the soy industry) shows that high estrogen is related to breast cancer, infertility and low libido in women. Add soy to the diet and you get even more of that.

How Very Convenient, But The Dangers of Soy Don't Stop There...

Manufacturing soy is a huge ordeal; made up of lots of processes. Here is what happens when one of the most common food ingredients, soy protein isolate is made:

  • After the bulk of a soy crop is solvent-extracted with hexane...
  • Soy protein isolate is taken as a byproduct from the manufacturing of soybean oil.
  • After being subjected to series of alkaline and acidic washes, it is spray-dried to become a powder (which ends up in "diet" protein powders and baby formula).
  • During the spray-drying process, carcinogenic nitrates are formed.
  • MSG is generally added to TVP(made via a high-temperature process), which gives it a "meaty" flavor and masks the bean taste. TVP is used as "fake meat" in many health food products.
  • Also present in soy (even after the high temperature process), is trypsin inhibitor, which makes it necessary for farm animals that consume soy-based products to be given lysine supplements. Humans who eat soy can also become deficient in lysine, but we generally don't hear about supplementation for that.

Other Side Effects of Soy (Wait! You Mean There's More?!)

Yes.

GMO Soy

What exactly is GMO soy?

77% of the soy grown worldwide is known as a Genetically Modified Organism. In the United States, 93% of the soy grown is considered GMO. This means that the soy seed has been genetically modified (in most cases) to be able to withstand huge amounts of the glyphosate or glufosinate herbicides. When you ingest soy that is NOT organic, you ingest these herbicides.

Glyphosate (used in Monsanto's Roundup) has been associated with a host of deformities in lab animals, and of course, large doses of it will cause serious injury or death to an adult. Initial exposure can lead to rashes, nausea, sore throat, difficulty breathing, headaches, lethargy and nosebleeds. Long term human studies have shown more increased risks of the cancer non-Hodgkin's lymphoma, miscarriages, and attention deficit disorder with this herbicide.

Glufosinatekills plants by inhibiting the enzyme glutamine synthetase (try saying that 5 times really quicly), an enzyme also found in animals including humans. In lab animals, particularly dogs, glufosinate caused heart and circulatory failure (within two weeks of ingesting). Other lab animals had higher rates of miscarriages, premature delivery, convulsions, diarrhea, and aggressiveness.

Please understand that A LOT of these two herbicides can be sprayed on GMO soy to discourage weed growth. GMO soy will contain traces of these herbicides. It cannot be washed off. IF you are going to consume soy, make sure you consume organic soy.

One more problem with GMO soy is that the soy has been genetically modified and long term studies on the effects of this on humans has not been studied extensively. The future implications on our society could be serious.

Last, But Not Least...

Soy allergies are highly common (along with milk, wheat, egg and nut allergies).

Check all labels. Soy is in many, many processed foods. Manufacturers will generally state on the label that the food product contains soy, but the best way to avoid it is to cook from scratch. It is known as "soy lecithin," "soya," "hydrolyzed soy protein," "soy protein isolate" or "soy." It can even be used as a "natural preservative."

Snacks. There quite a few snacks out there that contain soy. Some of these are made purely of soy (or have LOTS of it in there). Healthy Venison Curry - Primal Low Carb

When you think curry, you are probably thinking of a Saturday night, a few beers with your friends... well think again. This is a super healthy curry you can do any day of the week and it won't leave you feeling fat, bloated or heavy! This recipe has optimal amounts of protein and healthy fats and is low in carbohydrates.

Healthy Venison Curry - Primal Low Carb

Who says you need to have rice with a curry - we have included a yummy cauliflower rice and I promise you, you won't even know the difference. Low carb, highly nutritious and tasty!

Venison is a nice change, being one of the leanest and very tender red meats. This Venison curry is a great option in the cooler months and it includes the spice Turmeric, one of nature's most powerful healers which has been shown in multiple research papers to aid in fat metabolism and help in weight management.

Ingredients

  • 250g Diced Venison
  • 2 chopped Garlic Cloves
  • A pinch of Sea Salt
  • A glug of Olive Oil
  • 1 large finely chopped Onion
  • Red or Green Sliced Chilli, deseeded
  • 4 Cloves
  • 1 tsp Garam Masala
  • 1 tsp Ground Coriander
  • 1 tsp Turmeric
  • 1 ½ tsp Ground Cumin
  • 400ml can Organic Coconut Milk
  • Juice from ½ Lemon
  • 1 mug of halved Cherry Tomatoes
  • A few handfuls roughly chopped Spinach

Method

  • - Crush the Garlic Cloves with the Salt and rub into the Meat, set aside
  • - Gently heat the frying pan with Oil and cook the Onion until softened but not coloured (about 5 mins).
  • - Add fresh Chilli and cook for a further minute
  • - Add the Meat and cook until it's nicely browned and caramelised.
  • - Add the Spice and cook on a low heat for a few moments
  • - Pour in the Coconut Milk and stir.
  • - Put a lid on and let it simmer for 20-30 minutes until the Meat is tender.
  • - If the Sauce is looking too thick during the cooking process, add a glug of water.
  • - Add Tomatoes and Spinach and cook for a further minute
  • - Finish with the Lemon Juice, adjust Spices, Salt or Fresh Chilli, if needed.

Cauliflower Rice

  • 1 head cauliflower (or however much you want)
  • 2 glugs olive oil or a knob of butter
  • Steam cauliflower in a saucepan just enough to soften it. DO NOT ADD WATER, as it will become soggy. There is plenty of moisture in the cauliflower.
  • Process the cauliflower in a food processor until it is the size of rice or couscous, either using a plain steel blade or a shredder blade. Alternatively, you can shred it with a hand-held grater, or even a knife. The key is to make it fine.
  • Saute the cauliflower in a pan with oil and any additional seasonings you desire-garlic, ginger, pepper.

How to Cut Weight for a Competition or Fight

When it comes to cutting weight, many martial artists swear by it. The idea behind it is that if I can weigh in at 150 pounds, then gain weight back before the fight, and be fighting while weighing 165 pounds, then I'll have a size advantage on my opponent. This concept is most popular in western martial arts; wrestlers and Brazilian jiu jitsu fighters are so big on it, in fact, that you basically have to cut weight, just so you can be EQUAL in size to your opponent. I cut weight pretty successfully in my tournaments and I get people asking me for advice on how to do it safe and easy, so I thought I would share with every body. Be warned: cutting weight is not easy, but it is worth it on fight night.

How to Cut Weight for a Competition or Fight

First off, before your cut you should be lean. You need to prepare your body for competition. I try to get with in 12 pounds of my target weight before I even begin my true cut. For good healthy ways to lose weight I recommend the Paleo Diet, aka the caveman diet. A simple Google search can get you some good free info on that. You need to be at 8-12 pounds by 5 days before your weigh-ins. Now, a common misconception is that people think they will gain back the weight they lost while dieting before they fight. You will not, you will regain 2 to 3 pounds of your diet loss max by the time you fight. This is important to know because if you diet to 12 pounds short of your goal, and then cut the 12 pounds, will only be 15 whole pounds heavier on fight night. If you diet to 8 pounds short of your goal, you will probably only gain 11 pounds back by the time you fight. So the more weight you actually cut, the harder it will be, but the more you will get out of it. In martial arts, and especially in grappling, every pound counts!

So! Now your body is lean and ready to fight. Now comes the part that will test your dedication. We will begin the cut 5 days before the weigh-in. On days 5,4, and 3 before the weigh in, you should be drinking 2 gallons of water each day. DO NOT DRINK DISTILLED WATER. That amount of distilled water will wash out all minerals from your body, leaving your skin flaking and your head aching. Drink regular purified water. I carry around a gallon jug with me, so it is easier to remember how much I have drank. At this point there shouldn't any changes to your diet, just eat healthy and keep off the fat that you have lost in your dieting. You will be going to the bathroom like crazy! This is what we want. What we are doing is slowly washing out some of the minerals in your body (temporarily) this will help you retain less water in the later stages of the cut.

Once you have done this, for three days you can cut back on the water. 2 days before the weigh-in you want to drink one gallon of water. However, on this day, we must cut out all sodium from our diet. This means plain, raw, and green veggies. You can eat fruit for carbs/energy. Also, lean meats are good. Chicken or fish, but no sodium based seasonings. This means no stake sauce, no teriyaki sauce, no salt. I usually season my fish with lemon juice. Not the best tasting, but it's just for today. This is going to help us release water wait on the next day.

Now, you're one day from weigh-ins. Today is the hardest day, but don't worry, tomorrow will be the pay off. Today we drink no water at all. Because of all of the preparation we did the preceding days, we don't need to sauna or do any ridiculous work outs. Just do your regular work out. The amount that you sweat because of our preparation will be sufficient. Also, through out the day, and especially at night your body will release the water weight on its own. As far as food goes; your food will be minimal. Go to your local grocery store and pick up Balance Bars or some form of energy bar that his relatively high in calories but low in actual weight. Heavy bars like protein bars, will be too hydrated, and will put water weight in your body. I highly recommend Balance bars. They weigh next to nothing and they give you the calories you need to get through your work out. It usually eat 3 of these throughout the day. Eat nothing else besides those 3 bars.

When you wake up in the morning you should be with in 1-3 pounds of your goal weight. Your going to be thirsty and hungry, but your almost there. Take an all natural supplement called Triphala. You should be able to find it at a health food store or on the internet. So you may need to order this ahead of time. Take a dose of this (don't worry it is completely natural and you cannot overdose on them). What this will do is empty your bowels. You will lose a few pounds and should be on target at this point. Weigh in as early as you can so you have maximum recovery time.

Once you have weighed in you have to start the most important stage: the recovery. You should have 24 hours to recover. After your weigh ins your probably going to feel a little run down, but food and water will have never tasted so good. Start your recovery with Pedialite, you can get this at any grocery store. The original flavor tastes terrible but they have some good fruit flavors now. You want to drink one sip at a time. Chugging fluids will cause them to go right through you and you wont hold on to the nutrients. Take sip after sip and drink the whole thing. Then switch to water. If it is available to you, drink high PH water. 9.5 water if you can find it. Depending on where you live this might be easy to find or impossible. I have a filter on my sink that allows me to obtain it. If you don't have it, drink Arrowhead. As far as bottled water goes, it is the highest on the PH scale; 7.0. You may need to drink up to 2.5 gallons. Still continuing to drink one sip at a time. Don't depend on your thirst response to tell you when you are hydrated. Drink until your urine is clear.

A few supplements that will help you recover, if you want to spend the money on them, is Ionic Minerals, and spirulina chlorella. Both of these can be found online. They are all natural, and REALLY help you absorb the water you drink, this way you have to spend your entire day drinking gallons of water.

A FEW TIPS TO HELP YOU IF YOUR COMING IN SHORT:

If you are coming down to the wire and are not making weight, there are a few things you can do to lose an extra pound or so. Spitting helps, suck on jolly ranchers and fill a water bottle up. One water bottle = about one pound.

I do not recommend using the Sauna, but if you a pound short and you have 30 minutes until your weigh in, use it, but only in an emergency.

Delicious Paleolithic Meals

A lot of people are already switching to the Paleolithic diet. With that in mind, there is also a rapid growth in the desire for Paleolithic recipes. Paleolithic meals are really simple and very easy to prepare. A normal Paleolithic meal contains a piece of poached meat. Sometimes it can be seared, stewed, or baked as well together with vegetables. There are readily available recipes that will help you take simple yet basic recipes and make it into a flavorful meal.

Delicious Paleolithic Meals

An example of meals to create is steaks with eggs. Steaks with Eggs are important parts of the Paleolithic diet. You can gain two benefits by serving these two together.To prepare this meal, you need large steaks, 2 pieces of eggs, and 2-3 tablespoons of tallow and heat it over medium heat. Put peppers on the steaks, if paprika is available the better. Cook the sides of the steaks on the pan for 4 minutes each to come up with medium-rare steaks. If you like it well done, then you can leave it on the pan until you like the way how it is cooked. Remove the steaks out of the pan and set aside for now. Prepare the eggs until the egg white are not transparent. After cooking the egg you can now serve it with the steaks. For more flavors, dip the steaks in the yolk!

This time, another example of a Paleolithic meal specifically prepared for people who love seafood, an easy meal to prepare is grilled scallops in red pepper sauce. It is delicious too. Prepare the meal by having 12 large bay scallops, 1 tablespoon of coconut oil, and a piece of lemon. On how to prepare the red pepper sauce, you need 1 large roasted red pepper, 1 garlic clove, lemon juice, and 2 tablespoons of olive oil. To start preparing the meal, squeeze the lemon juice over the scallops and let them sit for a while. Mix all the ingredients for the red pepper sauce in a food processor and mix it until it will appear as a smooth sauce. Pour now the sauce in a sauce pan and cook over medium heat. After heating the sauce, prepare now the grill pan by heating it and brush it with the coconut oil. Once the grill is hot, you can now cook in the scallops for 3 to 4 minutes on each side. 1/2 cup dry white wine

1/4 cup red wine vinegar

1/4 cup fresh orange juice

2 tablespoons fresh lime juice

3 tablespoons soy sauce, low sodium

1 clove garlic - minced

1 tablespoon honey

1 teaspoon fresh ginger - minced

1 teaspoon ground cumin

1 chopped jalapeno pepper -- seeded, optional

8 skinless chicken thighs

Remove the skin and the surface layer of fat from the thighs. Rinse. Towel dry. In a large nonstick skillet, combine the sauce ingredients, including the jalapeno. Over medium-high heat, bring the mixture to a boil, then add the chicken (bones up). Reduce the heat to low, cover and simmer for 15 minutes. Remove the cover, turn the chicken pieces over, raise the heat to medium and cook until the liquid is evaporated and the chicken is glazed, about 10 to 15 minutes. Adjust heat as necessary.

1/2 ts Salt

1/4 ts Pepper

2 ts Olive oil

1 c Sliced fresh mushrooms

4 x Green onions, sliced

1 x Clove garlic, minced

1/4 ts Dried whole thyme

2 x Med tomatoes, cut in wedges

1 tb Minced fresh parsley

Trim excess fat from chicken. Rinse chicken with cold water, pat dry.

Place in a shallow container. Sprinkle with salt and pepper. Coat a large skillet with cooking spray; add olive oil. Place over med-hi heat until hot. Add chicken to skillet; cook 2-3 minutes on each side until lightly browned. Remove chicken from skillet, and drain on paper towels. Wipe skillet dry with a paper towel. Recoat skillet with cooking spray; place over med-hi heat until hot.

Add mushrooms and cook 2 minutes, stirring frequently. Remove mushrooms from skillet, and set aside. Recoat skillet with Pam. Place over med-hi heat until hot. Add green onions and garlic; sauté 1 minute. Stir in wine and thyme. Add reserved chicken. Bring mixture to a boil. Cover; reduce heat, and simmer 25 minutes. Add reserved mushrooms and tomato wedges; simmer 2 minutes or until thoroughly heated. Sprinkle with parsley, and serve immediately.
